After talking to several new patients recently, I realized that some of you are not aware that even though a big focus of my practice is women’s health, I also really enjoy seeing men and children.  Below are some of the most common concerns that I see these two groups for:

February Office Schedule

I will be out of the office from February 14th to the 18th.  Kiva will be at the front desk on Monday February 14th and Wednesday February 16th from 9 am to noon.  We will be back in for normal office hours starting on February 21st.  Please let us know if you need anything or would like to see me before that week.  Keep in mind that you can always book appointments and refill most supplements via my website as well.  

Artichoke Pilaf

I am featuring artichokes in a recipe for the second time in 3 weeks because they are a nutritional powerhouse!  In addition to being high in fiber and antioxidants, artichokes protect the liver from damage and help regenerate damaged liver cells. They stimulate the production of bile which helps move harmful compounds out of the body. 

Artichoke Pilaf
Ingredients 
340 g jar of marinated artichoke hearts, drained and roughly chopped 
1 cup uncooked brown rice 
1 Tbsp. extra virgin olive oil 
1 cup filtered water 
1 cup chicken broth 
1 cup green beans, ends trimmed 
1/4 cup flat leaf parsley, chopped 
1/2 cup toasted pine nuts 

Instructions 
Rinse rice very well under running water. 
In a large pan (with a lid) saute rice in olive oil over low heat for a few minutes. 
Pour water and chicken broth over rice, bring to a boil, cover and reduce heat to low and cook until rice is almost done, 35-40 minutes. 
Add green beans and continue cooking another 5-10 minutes until rice and beans are cooked.  Fluff with a fork, stir in artichokes and parsley and sprinkle with pine nuts.

When To Use Your Castor Oil Pack

Many of you have heard me discuss the benefits of the castor oil pack and you may have even tried the treatment a time or two.  I wanted to clarify when to use the pack so that you have this powerful home treatment at the top of your mind for certain situations. 
1.  During a Detox or Cleanse.  The castor oil pack is an essential adjunct to any detox as it stimulates bile release from the liver and gallbladder, aiding in the elimination of toxins. 
2.  Digestive Upset, Bloating and Constipation.  Because the pack stimulates bile release from the liver and gallbladder which is necessary to break down and digest food, the digestive process is enhanced and you will find that you wake up with a flat stomach and have a regular bowel movement in the morning.  The pack also activates the parasympathetic nervous system allowing you to “rest and digest” more effectively. 
3.  Anxiety, Stress and Insomnia.  The pack’s activation of the parasympathetic nervous system is deeply calming and allows you to shut off worry and get a very good night’s sleep. 
4.  PMS and Menstrual Cramps.  Due to the pack’s liver function enhancing effect plus it’s anti-inflammatory effect, it can be a very helpful aid before and during your period.  It will reduce pain, bloating, moodiness and sleep disturbances during that time. 
5.  Any Time!  The pack can be used almost any time and some use it nightly to maintain their health, especially with chronic conditions like Irritable Bowel Syndrome.

Nutrient Deficiencies

Hello Everyone, 
I would like to discuss a topic whose existence in the United States would seem rare, but is actually quite common: nutrient deficiencies.  As the eighth wealthiest country in the world, one would think that most of us are well nourished and have access to a variety of foods.  In fact, even among my patients who are generally more knowledgeable about nutrition than the rest of the population, I see nutrient deficiencies all the time. 
The basic causes of nutrient deficiencies are inadequate intake, inadequate absorption and increased need for certain nutrients. 
The populations who are most at risk of nutrient deficiency are women of childbearing age, pregnant and lactating women, children, teens, older adults, obese individuals and the critically ill.  I also often see vegetarians and vegans with deficiencies.  
Certain medications such as acid blockers used for acid reflux and certain medical conditions such as Celiac Disease and Inflammatory Bowel Disease specifically increase risk. 
The nutrients most commonly found deficient include Vitamin D, Vitamin B6, Vitamin B12, Folic Acid, Essential Fatty Acids, Magnesium, Iron, Calcium and Iodine. 
The best way to determine if you have nutrient deficiencies is to test your blood levels.  It can be harmful to take excess amounts of some of these nutrients if you don’t need them.  Please contact us if you would like to schedule a time to check your levels.  I also plan to hold my annual Health Fair Lab Special during the month of March which can include some of the nutrients I mentioned above.

Healthy Eating for 2022

Happy New Year Everyone! 
Getting back on track with a healthy diet after the holidays doesn’t have to be complicated or extreme.  I know many of us feel the need to do some type of a cleanse after indulging in more sugar, alcohol, cheese, etc. than we normally do, but I feel that mid-winter is not the best time to do a cleanse involving a lot of raw foods or juices.  Winter is the time when our “digestive fire” is at it’s lowest, indicating that we would do well to provide our body with nourishing warm, cooked foods to aid digestion, keep our immune system healthy and stay warm.  Those warm, cooked foods can be quite healthy and include plenty of plant foods, and this type of thing is what I like to focus on in January.  This is not to say that a raw salad or green juice can’t be enjoyed at this time of year, but it should not comprise the bulk of the diet.  Below is a recipe that is a good example of what to turn to right now to stay healthy and warm.   

White Bean and Kale Soup 

Ingredients 
1 Tbsp. olive oil 
1 large onion, diced,
3 sticks of celery, diced 
3 medium carrots, diced 
6 garlic cloves, chopped finely 
1/2 tsp. crushed red pepper flakes 
3 1/2 cups low sodium vegetable broth 
1 tsp. kosher salt 
Freshly ground black pepper 
Bouquet garni:  2 bay leaves+1 large sprig of sage+1 large sprig of rosemary tied together with kitchen twine 
1 medium Yukon gold potato, peeled and finely diced 
2 15 oz. cans cannellini beans, drained and rinsed or 3 1/2 cups cooked cannellini beans 
1 14 oz. can artichoke hearts, drained and finely chopped 
1 small bunch of lacinato kale, center rib removed and shredded 
Good quality extra virgin olive oil 
1/4 of a fresh lemon
1-2 Tbsp. fresh flat leaf parsley, finely chopped

Instructions   
1.  Heat oil in a large soup pot over medium-high heat.  Once hot, add the onion, celery and carrots, along with a pinch or two of salt.  Cook until the vegetables are softened and starting to brown, 6-9 minutes. 
2.  Add the garlic and red pepper flakes and cook another 1-2 minutes. 
3.  Pour in the vegetable broth and deglaze the pot, stirring up any browned bits on the bottom of the pot.  Add the 1 tsp.  kosher salt, black pepper to taste, bouquet garni, potatoes, cannellini beans and artichokes.  Stir well. 
4.  Bring the soup to a boil.  Then reduce heat, cover the pot and simmer the soup for 15 minutes or until the potatoes are tender. 
5.  Transfer half of the soup to a blender or use an immersion blender and blend until half the soup is thick and smooth.  Then return the pureed soup to the pot. 
6.  Add the kale to the soup and simmer for 3-5 minutes or under the kale is tender but still bright green.  Squeeze the 1/4 lemon into the soup and add the fresh parsley.  Taste for seasonings, add more salt if needed.  Remove the bouquet garni.  Serve the soup in bowls and garnish with a drizzle of olive oil.

Kale Salad with Roasted Butternut Squash and Maple Cider Vinaigrette

This seasonal salad takes a little extra effort but is delicious! 

Ingredients 

Vinaigrette 
3 Tbsp. apple cider vinegar 
1 1/2 Tbsp. maple syrup  
2 tsp. dijon mustard 
6 Tbsp. olive oil  
Sea salt and black pepper to taste 

Salad 
1 medium butternut squash peeled and cut into 1/2 inch cubes (about 4 cups) 
6 slices nitrite free bacon 
6 cups kale, chopped 
1 tsp. olive oil + 1 Tbsp. olive oil, divided 
Sea salt 
3/4 cup pecans 
1 tsp. ghee or coconut oil 
1 tsp. maple syrup 
1 large apple, finely diced 
1/2 cup dried cranberries 

Instructions 

1.  Combine all of the vinaigrette ingredients in a glass mason jar with lid and shake.  Set aside. 
2.  Preheat oven to 425 and line 2 large baking sheets with parchment paper.  Place the butternut squash on one sheet and sprinkle with sea salt and 1 Tbsp. olive oil.  Toss to coat.  Put the sheet in the oven and roast for 30 minutes or until browning and soft. 
3.  Lay the bacon in a single layer on the second sheet.  When the squash has roasted for 15 minutes, put the bacon in the oven on another rack either above or below squash.  The bacon should take 13-15 minutes.  Watch carefully for burning.  When bacon is done, remove and drain on paper towels.  Remove squash from oven as well. 
4.  While the bacon and squash are in the oven, prepare the rest of the salad.  Put the kale in a large bowl and sprinkle with a little sea salt and 1 tsp. olive oil.  Massage the kale with your hands to soften it. 
5.  In a small skillet over medium heat, melt the ghee or coconut oil.  Once hot, add pecans and sprinkle with salt and maple syrup.  Cook, stirring occasionally for 2-3 minutes. 
6.  Toss the kale with the roasted butternut squash and crumble bacon over the top.  Add apple, pecans and cranberries and toss to combine.  Shake the salad dressing and toss as much as desired with salad.  Enjoy!

Vaccine Booster

If you are eligible and interested in a booster dose of the Covid-19 vaccine, Ouray County is holding a vaccine clinic this Thursday and Friday October 28th and 29th at the 4H Center in Ridgway from 9 am to 4 pm. All of the Covid vaccines will be available as well as the Flu Vaccine. No appointment is necessary. If you are unable to attend on these days, you may call the Ouray County Public Health Department at 970-325-4670 to schedule a vaccine for another time.

Chai Spiced Butternut Squash Muffins

1/3 cup melted butter or vegetable oil

1 heaping cup finely mashed roasted butternut squash or pumpkin

2 large eggs

1/2 cup maple syrup

3 Tbsp. milk or almond milk

2 tsp. vanilla extract

1 3/4 cups whole wheat pastry flour ( I substituted gluten free all purpose flour and buckwheat flour)

1 tsp. baking soda

1 1/2 tsp. cinnamon

1/2 tsp. ground ginger

1/2 tsp. cardamom

1/2 tsp. allspice

1/4 tsp. saltInstructions

1. Preheat oven to 350 degrees.

2. Line a 12 cup muffin pan with muffin liners.

3. In a large bowl, whisk together all of the wet ingredients until smooth.

4. In a separate large bowl, whisk together all of the dry ingredients.

5. Add dry ingredients to wet ingredients and whisk until just combined.

6. Divide batter evenly between muffin liners.

7. Bake for 20-25 minutes or until a toothpick comes out clean or with just a few crumbs attached.

8. Allow to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.Enjoy! Great with a cup of tea or coffee.

Hyaluronic Acid

Hyaluronic Acid is getting a lot of attention lately as a topical and internal treatment for a multitude of conditions ranging from burns and skin ulcers to arthritis. I am particularly impressed by it’s topical use for aging skin. Hyaluronic acid is a naturally occurring glycosaminoglycan found in the body’s connective tissue that can bind up to 1000 times its weight in water. This makes it a very effective hydrating agent that can increase skin’s moisture content and reduces wrinkles and sagging for that reason. Many companies now make face creams with hyaluronic acid which can be beneficial but I am seeing even better results with applying a few drops of a pure hyaluronic acid serum on the skin after cleansing, followed by your usual moisturizer.
